| 1/2 cup fresh onion, chopped |
| 2 tsp fresh garlic, chopped |
| 1/2 tsp thyme |
| 1/3 cup basil, finely chopped |
| 3/4 cup butter |
| 2 Tbs olive oil |
| 3/4 cup finely chopped celery |
| 3/4 cup carrots, shredded |
| 2 28 ounce can Italian styled tomatoes |
| 4 Tbs tomato paste |
| 1/4 cup flour |
| 2 1/2 14.5 ounce cans chicken broth |
| 1 cup heavy cream |
| 1 tsp sugar |
| 1 dash Salt & pepper to taste |
Creamy Tomato and Garlic Soup Directions
- Saute the chopped onion, thyme, and basil in butter and olive oil until onion wilts.
- Put onion and vegetable mixture and add to blender along with italian tomatoes and tomato paste.
- Mix small amount of the chicken broth with flour.
- Blend until smooth.
- Pour back in pot and add chicken broth, cream, sugar, and salt and pepper to taste.
