| 2 large Yams or sweet potatoes |
| 1/4 tsp cinnamon |
| 3 Tbs butter |
| 2 Tbs lemon |
| 1/2 cup brown sugar |
Sauteed Sweet Potatoes or Yams Directions
- Parboil or cook yams/sweet potatoes in microwave until fork tender (not too soft.)
- Cool, peel and slice.
- Mix cinnamon with melted butter; add lemon juice and brown sugar.
- Spray fry pan with Pam or other cooking spray.
- Add yams to the pan.
- Pour cinnamon butter mixture over and sauté yams until browned and crispy on edges
