Spaetzle
| 2 large eggs |
| 2 cups flour |
| 3/4 cup water |
| 1 dash salt to taste |
Spaetzle (Cut Noodles) Directions
- Combine eggs, water, flour, and salt, beating until smooth.
- Put batter into the square spaetzle maker (or sieve with large holes like a vegetable steamer) over a pot of salted boiling water or cooking soup.
- Slide basket back and forth, letting tiny dumplings fall into the boiling water.
- When done,, they will rise to the surface.
- Use a large slotted spoon to dip them out into a large bowl.
- Repeat until the dough is used up.
Notes
Note: As a side dish, toss the speatzle in brown butter.
As a main dish, like cheese spaetzle, serve with browned onions and shredded Swiss cheese in a large pan.
Great with a crisp salad.
For soup or colorful side dish, dough can be dyed with tomato puree', spinach puree', finely chopped herbs, or beet-root juice.
