Omlet Roll
| 4 ounces cream cheese |
| 3/4 cup milk |
| 2 Tbs flour |
| 1/4 tsp salt |
| 12 large eggs |
| 8 ounces ham, finely chopped |
| 6 ounces Swiss Cheese, shredded (or cheddar) |
| 1/4 cup green onions, chopped |
| 2 Tbs Dijon mustard |
Ham & Cheese Omelet Roll Directions
- Preheat oven to 375°
- Combine the cream cheese and milk in a blender until smooth.
- Add flour and salt; mix well.
- Add eggs to the cream cheese mixture and mix well.
- Cut an 18-inch long piece of parchment paper.
- Press into the bottom and up the sides of a large cookie sheet. (Spray the parchment paper with cooking spray.)
- Pour egg mixture in the pan.
- Bake 30-33 minutes or until the egg is puffy and golden.
- Remove the omelet from the oven.
- Immediately spread with the Dijon mustard.
- Sprinkle 1/2 of cheese and top with ham and green onions.
- Sprinkle with remaining cheese.
- Roll up jelly roll fashion.
- Let stand 5 minutes to allow the cheese to melt.
- Slice into wedges and serve.
Notes
This recipe can be made the day before and popped in the oven for breakfast!
