Enchiladas
| 1 1/2 lbs ground beef |
| 1 medium onion, chopped |
| 1 clove garlic |
| 1 tsp salt |
| 1/4 tsp pepper |
| 1 Tbs chili powder |
| 1 small can chopped olives |
| 1 8 ounce can tomato sauce |
| 1/2 dozen corn tortillas |
| 2 cups cheddar cheese grated |
| 2/3 cup water. |
Layered Enchilada Pie Directions
- Saute meat, onion, and garlic.
- Stir in seasonings, olives and tomato sauce.
- In casserole, alternate 3 tortillas with meat sauce and grated cheese.
- Do it again.
- Pour water around edges.
- Cover and bake at 350° for about 40 minutes.
