Chile Verde
| 1 Tbs oil |
| 1 med onion, chopped |
| 1 1/2 cloves garlic, chopped |
| 1 medium green pepper, chopped |
| 6 med boneless pork chops |
| 1 16 ounce jar salsa verde (green salsa) |
| 1 7 ounce can diced green chiles |
| 1 19 ounce can green chile enchilada sauce |
| 1 tsp oregano |
| 1 Tbs chili pepper |
| 1 tsp cumin |
| 1 salt and pepper to taste |
| 1 lime for juicing |
| 1 bunch fresh cilantro, chopped |
Chile Verde Directions
- Saut'e the onion, garlic, and bell pepper in oil until soft.
- In a crockpot, add the pork chops, sauteed onion, peppers and garlic.
- Continue to add salsa verde, green chiles, green enchillada sauce, oregano, cumin, and chile powder.
- Stir ingredients together.
- Cook on high 6-6 hours if pork is frozen, 4-5 hours of pork is not frozen.
- After the pork is cooked, it should break apart/shred easily.
- Salt and pepper to taste.
- Just before serving, squeeze lime juice over top and sprinkle chopped cilantro on top.
- Warm tortillas and fille center with pork and chile verde. sprinkle cheese on top.
- Roll up.
- Spoon more sauce from the chile verde on to and sprinkle with grated cheese.
- Serve with salad and salsa
