Meatballs
| 1 lb ground beef |
| 1 egg |
| 1 tsp salt |
| pepper to taste |
| 1 1/2 Tbs onion, finely chopped |
| 1 Tbs flour |
| 1 cup chicken stock |
| 1 Tbs oil |
| 4 slices pineapple, cut up |
| 3 green peppers, cut into large pieces |
| 3 Tbs cornstarch |
| 2 tsp soy sauce |
| 1/2 cup vinegar |
| 1/2 cup sugar |
Polynesian Meatballs Directions
- Mix the meat, egg, salt, pepper, and onion.
- Form into balls.
- Roll in flour and fry in heavy skillet until light brown.
- Add 1/3 cup of the chicken stock, oil, pineapple, and green pepper
- Simmer over low heat until peppers are tender.
- Combine remaining 2/3 cup chicken stock.
