Zucchini Bread
| 3 large eggs |
| 1 cup cooking oil |
| 2 cups sugar |
| 2 cups zucchini, raw, grated, and peeled |
| 3 tsp vanilla |
| 3 cup flour |
| 1 tsp baking soda |
| 1 tsp salt |
| 3 tsp cinnamon |
| 1/4 tsp baking powder |
| 1/2 cup nuts, chopped |
Zucchini Bread Directions
- Combine eggs, oil, sugar, zucchini, and vanilla; mix well.
- Sift flour, soda, salt, cinnamon, and baking powder together.
- Add zucchini to mixture, blend well.
- Stir in chopped muts.
- Grease and flour bread pans.
- Bake at 350° for 1 hour.
- When cool, icing may be added if desitred.
