Lemon Pie Filling
| 1/3 cup sugar |
| 1/2 cup cornstarch |
| 1 1/2 cup boiling water |
| 3 eggs, lightly beaten |
| 1/2 cup lemon juice |
| 1/2 Tbs grated lemon peel |
| 2 Tbs butter |
Lemon Pie Filling Directions
- In a 4-cup glass measuring cup, blend sugar and cornstarch together with boiling water.
- Microwave mixture 4-5 minutes, stirring several timjes.
- Wehn mixture becomes translucent, add a little of the hot mixture to the egg yolks, stirring well.
- Blend into hot mixture.
- Cook on high, 40-60 seconds until thick and even.
- Stir in juice, lemon peel and butter.
