Stuffed Bell Peppers
| 4 large green peppers (red or yellow is ok too!) |
| 1/2 lb hamburger |
| 1/2 cup old- fashioned oatmeal |
| 1 large egg |
| 1 tsp garlic powder |
| 1/3 cup onion, finely minced |
| 2 med stalks green onion, finely chopped |
| 1 1/2 tsp seasoned salt |
| fresh ground pepper |
| 1/2 cup V-8 Juice |
| 1 6 ounce can tomato paste |
Stuffed Bell Peppers Directions
- Preheat oven to 350°
- Cut the top off of your bell peppers and clean out the seeds and the membrane and discard the top; set aside.
- In a large bowl, combine hamburger, oatmeal, garlic powder, minced onions, seasoned salt, and egg.
- Mix until ingredients are combines, but don't over mix.
- Stuff into peppers and place in 8x8" baking dish upright
- Mix the V-8 juice with the tomato paste and pour over tops of peppers and hamburger
- Top with finely chopped green onion and fresh ground pepper
- Put in overn for 25 minutes or until centers are well done.
- Take out of oven and let stand for 10 minutes.
- Serve
Notes
you can also slice the bell peppers in half and stuff them that way too!
