Sauce
| 2 Tbs butter |
| 1 large shallot, finely minced |
| 2 large cloves garlic, finely minced |
| 3 Tbs Worcestershire sauce |
| 1 Tbs orange juice |
| 1 tsp Dijon mustard |
| 1 cup Sensous slathering sauce |
| 1 tsp salt |
Finish
| 2 Tbs Salt |
| 2 Tbs black pepper, freshly cracked |
| 4 8 ounce beef tenderloin steaks |
| 2 Tbs olive oil |
| 2 Tbs crumbly bleu cheese |
| 2 Tbs sliced scallions |
Black N Blue Tenderloin Directions
- In a saucepan over mediumheat, melt the butter.
- Add the shallots and garlic, cooking until soft.
- Add the remaining ingredients,
- Keep warm on the back burner, stirring occasionally.
- In a large cast iron skillet (if you have one,) bring up to smoking on a high heat.
- Press the salt and pepper into the steaks, making sure to coat each side.
- Add olive oil to your pan, swirling arount to coat the surface.
- Add the steaks, blackening them for about 4 minutes on each side until medium rare, or to your preferred doneness.
- Remove from skillet and keep warm on a serving platter.
- Move the saucepan to the front burner.
- Quickly add the blue cheese.
- Stir quickly and pour over steaks before the cheese completely melts.
- Garnish with scallions.
