Dirty Rice
| 1/2 cup oil |
| 1/4 cup flour |
| 1 cup minced onion |
| 1 1/2 pounds chicken liver, finely chopped |
| 1/3 cup celery, minced |
| 1/2 cup parsley, minced |
| 1/2 cup green pepper, diced |
| 1 clove garlic, minced |
| 2 teaspoons salt |
| 1 teaspoon black pepper |
| 4 1/2 cup chicken stock |
| 2 cups long grain rice |
Dirty Rice Directions
- Preheat oven to 350°
- In a large pan, bring the stock to a boil and add the rice.
- Reduce the heat and simmer until rice is tender, about 20 minutes.
- In another large pan, heat the oil and add the flour.
- Saute onions, chicken livers, celery, parsley and garlic for several minutes.
- Add the seasonings and saute again for about 2 to 3 minutes.
- Add to the rice, stirring well to combine all ingredients
- Pour the cooked rice into an oven safe dish and put in the overn, cooking for 20 minutes.
- Serve!
