Chorizo Spice
| 2 Tablespoons sweet paprika |
| 1 Tablespoon smoked paprika |
| 1 Tablespoon hot paprika |
| 1 teaspoon chili powder |
| 2 teaspoons dried oregano |
| 1/2 teaspoon chipotle powder m (more or less to you personal taste) |
| 1 teaspoon cumin |
| 1 teaspoon granulated garlic |
| 1/4 tsp granulated onion |
| 1 teaspoon fresh black pepper, ground |
Chorizo Sausage
| 1 pound ground pork |
| 1 pound ground chicken |
| 1 tablespoon rice wine or white wine vinegar |
Copycat Chipotle Chorizo Directions
- Combine the spices for the chorizo seasoning in a small bowl and set aside.
- Over medium heat, add the ground or, ground chicken to a heavy skillet. While cooking the meat, scramble and cook until the meat is almost done.
- Add the chorizo seasoning, about 3 Tablespoons to the meat mixture, mixing the spices well into the meat and the meat starts to become a bit crusted in spots.
- Add the balsamic vinegar, combining well, seasoning to your desired flavor.
