24 medium (1.5 pounds) crimini mushrooms stems removed
1/2 cup panko breadcrumbs
1/4 cup grated Parmesan
2 cloves garlic, miced
2 Tablespoons fresh parsley, chopped
1 teaspoon fresh thyme leaves
3 Tablespoons olive oil
1/4 cup cream cheese, softened
slat and black pepper to taste
2 Tablespoons chopped walnuts for crunch (optional)

Stuffed Mushrooms (Gilmore Girls-Inspired) Directions

  1. Prep Mushrooms: Preheat oven to 375°F (190°C). Clean mushrooms; remove stems and finely chop stems for filling.
  2. Make Filling: In a skillet, heat 1 tbsp oil; sauté chopped stems and garlic 5 min. Mix with breadcrumbs, Parmesan, parsley, thyme, cream cheese, salt, and pepper (add walnuts if using).
  3. Stuff: Place mushroom caps on a baking sheet. Fill each with 1–2 tsp filling, pressing gently.
  4. Bake: Drizzle with remaining oil. Bake 20–25 min until golden and tender.
  5. Serve: Arrange on a platter; serve warm as a chic starter before Squab or Pot Roast.
