Ingredients
Ingredients:
1 cup sugar |
1/2 cup flour, sifted |
1/4 teaspoon salt |
3 teaspoons lemon rind, grated |
1 1/4 cup water |
1/3 cup lemon juice |
1 cup crushed pineapple |
3 large egg yolks, slightly beaten |
1 Tablespoon butter |
Meringue:
3 large egg whites |
1/4 teaspoon cream of tartar |
3/4 cup white sugar |
Pineapple Pie Directions
- Combine sugar, flour, salt, lemon rind, water, lemon juice and crushed pineapple. Blend well.
- Blend: Blend a little of the hot mixture into three slightly beaten egg yolks. Add to hot mixture in sauce pan and cook for 2 minutes longer - stirring constantly
- Stir in butter cover and cool.
- Pour into pie shell and top with meringue.
- For the meringue: In large bowl, beat egg whites and cream of tartar with electric mixer until foamy. Gradually add sugar, beating until mixture forms stiff peaks.
- Bake at 350° for 12 to 15 minutes.
