Ingredients

Ingredients:

1 cup sugar
1/2 cup flour, sifted
1/4 teaspoon salt
3 teaspoons lemon rind, grated
1 1/4 cup water
1/3 cup lemon juice
1 cup crushed pineapple
3 large egg yolks, slightly beaten
1 Tablespoon butter

Meringue:

3 large egg whites
1/4 teaspoon cream of tartar
3/4 cup white sugar

Pineapple Pie Directions

  1. Combine sugar, flour, salt, lemon rind, water, lemon juice and crushed pineapple. Blend well. 
  2. Blend: Blend a little of the hot mixture into three slightly beaten egg yolks. Add to hot mixture in sauce pan and cook for 2 minutes longer - stirring constantly 
  3. Stir in butter cover and cool. 
  4. Pour into pie shell and top with meringue. 
  5. For the meringue: In large bowl, beat egg whites and cream of tartar with electric mixer until foamy. Gradually add sugar, beating until mixture forms stiff peaks.
  6. Bake at 350° for 12 to 15 minutes.
