Ingredients

Salad

3 cup uncooked bowties pasta
2 cup uncooked rainbow pasta
1 8 ounce can pineapple tidbits
1 8 ounce can sliced water chestnuts
3/4 cup celery, chopped
3/4 cup cashews
2 cups chicken, cooked and diced
1 11 ounce can mandarin oranges
1 cup halved green or red grapes
1 cup dried cranberries
1 dash salt and pepper to taste

Dressing

3/4 cup milk
1 1/2 cup salad dressing (Miracle Whip)
1/4 tsp celery seed (optional)
2 Tbs sugar

Chicken Cashew Salad Directions

  1. Cook pasta according to package directions.
  2. Rinse with cold water until pasta is chilled. Drain well
  3. Add drained pineapple, water chestnuts, celery, cashews, cooked chicken, oranges, halved grapes, and dried cranberries.
  4. Pour dressing over salad and toss to coat.
  5. Salt and pepper to taste.
  6. Cover and chill for 4-6 hours to blend flavors.
  7. Serve with fruit and ches and a cracker tray
  8. Dressing: combine milk, salad dressing, optional celery seed and sugar.
  9. Whisk until smooth.
  10. Add more or less milk to create the desired consitency of the dressing.

Notes

Note: Dressing may be substituted with a 16 ounce bottle of coleslaw dressing thinned with 2 - 4 tablespoons of milk.
