Ingredients

Salad

1 1/2 lbs shell macaroni
2 cups broccoli florets
1 cup cauliflower florets
1 cup fresh sliced mushrooms
1 6 ounce can artichoke hearts, drained and rinsed
1 cup sliced pitted olives
1/2 cup chopped green onion
2/3 cup Italian dressing
1 medium avocado, seeded, peeled and sliced
1 medium tomato, seeded and chopped

Italian Vegetable Toss Directions

  1. Cook Macaroni according to package directions.
  2. Drian.
  3. Rinse with cold water, drain well.
  4. In a large bowl, combine macaroni, broccoli florettes, caulifower florettes, sliced mushrooms, artichoke hearts, ripe olives, and chopped green onion.
  5. Toss with Italian Dressing.
  6. Cover and chill several hours.
  7. At serving time, toss vegetable mixture with with avacado and tomato
  8.
