Salad
3 cup large shell pasta, cooked |
4 cup chicken breasts |
1/4 small onion, chopped |
1/2 tsp thyme |
1 bay leaf |
2 Tbs onion, grated |
6 green onions, chopped |
2 cups celery, diced |
2 cup red grapes |
2 cups apples, chopped |
1 20 ounce can pineapple tidbits, drained |
1 cup mayonnaise |
1 8 ounce bottle Kraft coleslaw dressing |
1/4 tsp salt |
1/8 tsp pepper |
1 1/2 cups cashews |
Chicken Cashew Salad Directions
- Cook the pasta in salted water to al dente.
- In a seperate pan place the chopped chicken breasts, onion, thyme, bay leaf in salted water. When chicken is cooked, drain the water.( you can save the stock from the chicken for another dish.)
- Combine onion, green onions, celery, grapes, apple and pineapple.
- Add the cooled chicken.
- In a seperate bowl, combine the mayonnaise, coleslaw dressing, salt and pepper. pour over the chicken and vegetables.
- Mix well
- when ready to serve, tp with cashews
