Ingredients
Squash
1 3-4 lb spaghetti squash |
2 Tbs olive oil |
1 Tbs butter |
8 ounces sliced mushrooms |
2 med ripe tomatoes |
1 med zucchini, cut into 1/4 inch slices |
5 med green onions, chopped |
1 tsp minced garlic |
1 med red pepper, cut into strips |
1/4 lb fesh snow peas, trimmed |
3/4 cup fresh Parmesan cheese, grated |
Spectacular Spaghetti Squash Directions
- Bake whole squash 1 hour at 350░ or until tender when pierced with a fork.
- Remove from oven and allow to cool 5 - 10 minutes.
- Halve lengthwise and remove the seeds.
- With a fork, pull out the spaghetti like strands and place in a large serving bowl.
- In a large skillet, heat olive oil and butter over medium heat.
- Add mushrooms, tomatoes, zucchini, green onions, garlic, red pepper and snow peas.
- Cook until soft, 4 - 5 minutes
- Pour over squash and toss to combine.
- Sprinkle with parmesan cheese and serve immediately.
