Ingredients

Waffles

2 cups flour
2 Tbs baking powder
1 Tbs cinnamon
1 Tbs sugar
1/2 tsp nutmeg
1/4 tsp salt
4 large eggs
1/2 cup milk
1 cup pumpkin
3/4 cup butter or margarine
1 Tbs vanilla

Pumpkin Waffles Directions

  1. Combine and set aside the flour, baking powder, cinnamon, sugar, nutmeg, and salt.
  2. Seperate the eggs.
  3. Set eggwhites aside for later.
  4. Beat the egg yolks slightly.
  5. Add milk, pumpkin, butter, and vanilla.
  6. Mix until blended.
  7. Add to flour mixture.
  8. Beat egg whites until soft peaks form.
  9. Fold into the pumpkin mixture.

Notes

NOTE: One large (29-ounce can) is enough to triple this recipe.
