Ingredients
Waffles
2 cups flour |
2 Tbs baking powder |
1 Tbs cinnamon |
1 Tbs sugar |
1/2 tsp nutmeg |
1/4 tsp salt |
4 large eggs |
1/2 cup milk |
1 cup pumpkin |
3/4 cup butter or margarine |
1 Tbs vanilla |
Pumpkin Waffles Directions
- Combine and set aside the flour, baking powder, cinnamon, sugar, nutmeg, and salt.
- Seperate the eggs.
- Set eggwhites aside for later.
- Beat the egg yolks slightly.
- Add milk, pumpkin, butter, and vanilla.
- Mix until blended.
- Add to flour mixture.
- Beat egg whites until soft peaks form.
- Fold into the pumpkin mixture.
Notes
NOTE: One large (29-ounce can) is enough to triple this recipe.
