Ingredients

Omlet Roll

4 ounces cream cheese
3/4 cup milk
2 Tbs flour
1/4 tsp salt
12 large eggs
8 ounces ham, finely chopped
6 ounces Swiss Cheese, shredded (or cheddar)
1/4 cup green onions, chopped
2 Tbs Dijon mustard

Ham & Cheese Omelet Roll Directions

  1. Preheat oven to 375°
  2. Combine the cream cheese and milk in a blender until smooth.
  3. Add flour and salt; mix well.
  4. Add eggs to the cream cheese mixture and mix well.
  5. Cut an 18-inch long piece of parchment paper. 
  6. Press into the bottom and up the sides of a large cookie sheet.  (Spray the parchment paper with cooking spray.)
  7. Pour egg mixture in the pan.
  8. Bake 30-33 minutes or until the egg is puffy and golden.
  9. Remove the omelet from the oven.
  10. Immediately spread with the Dijon mustard.
  11. Sprinkle 1/2 of cheese and top with ham and green onions.
  12. Sprinkle with remaining cheese.
  13. Roll up jelly roll fashion.
  14. Let stand 5 minutes to allow the cheese to melt.
  15. Slice into wedges and serve.

Notes

This recipe can be made the day before and popped in the oven for breakfast!
