Ingredients

Cheese Blintzes

4 large eggs
1 cup sour cream
1 tsp salt
1 cup cottage cheese
1 Tbs sugar
1 cup flour

Easy Cheese Blintzes Directions

  1. In a medium-sized bowl, beat the eggs with a fork.
  2. Add cottage cheese and sour cream; blend well.
  3. Add dry ingredients and mix well until blended.
  4. Cool like panckakes, center should remain cheesy.
  5. Serve hot topped with raspberry jam and a dollop pf Cool Whip.
  6. I have used fat-free cotaage cheese and sour cream for a low fat version and it works well.
