Ingredients

Swiss Steak

1/2 lb beef round steak, cut into two pieces
1 Tbs flour
1/4 tsp salt
1/8 tsp pepper
1 8 ounce can stewed tomatoes
1/4 cup chopped onions
2 pepper rings (optional)

Swiss Steak for 2 Directions

  1. Pound meat to 1/4 inch thickness with edge of saucer or meat mallet.
  2. In paper or plastic bag, mix flour, salt and pepper.
  3. Shake meat in a bag until well coated.
  4. Place meat in 2 quart square casserole.
  5. Mix tomatoes, onions, and pepper rings.
  6. Pour over meat; cover.
  7. Microwave at 50% for 25 minutes (medium power)
  8. Turn meat over, spoon sauce over meat;
  9. Microwave covered at 50%(medium) for 15-20 minutes or until tender.
  10. Let stand covered, for 10 minutes.

Notes

If you have the time, brown the meat and place it and the cracklings in a crocpot.

Let cook for 4 hours on slow.  I like this way better.
