Ingredients
Steak Barbacoa
3 pounds beef roast |
2 medium onions, diced |
3 Tablespoons olive oil |
8 cloves garlic, minced |
1 Tablespoon taco seasoning |
1 1/2 Tablespoon oregano, dired |
1 7 ounce can chipotle in adobo sauce |
1 cup chicken broth |
1 cup water |
1 bay leaf (Remember to remove after cooking) |
2 Tablespoons white vinegar |
Chipotle Steak Barbacoa Directions
- In a blender add all the ingredients except the meat into a blender or food processor and puree till it is well blended and is a sauce.
- Place some of the sauce in the bottom of a crockpot and put the roast on top with the remainder of the sauce poured over the top.
- slow cook for 8-10 hours.
- To use the InstaPot follow the same directions and put the pressure cooker on high and cook for 108 minutes, letting the instInstaPotapot release naturally.
- when done, place the meat in a bowl and shred using two forks.
- Enjoy with some of your favorite fillings for a wonderful Chipotle burrito
