Ingredients

Steak Barbacoa

3 pounds beef roast
2 medium onions, diced
3 Tablespoons olive oil
8 cloves garlic, minced
1 Tablespoon taco seasoning
1 1/2 Tablespoon oregano, dired
1 7 ounce can chipotle in adobo sauce
1 cup chicken broth
1 cup water
1 bay leaf (Remember to remove after cooking)
2 Tablespoons white vinegar

Chipotle Steak Barbacoa Directions

  1. In a blender add all the ingredients except the meat into a blender or food processor and puree till it is well blended and is a sauce.
  2. Place some of the sauce in the bottom of a crockpot and put the roast on top with the remainder of the sauce poured over the top.
  3. slow cook for 8-10 hours.
  4. To use the InstaPot follow the same directions and put the pressure cooker on high and cook for 108 minutes, letting the instInstaPotapot release naturally.
  5. when done, place the meat in a bowl and shred using two forks. 
  6. Enjoy with some of your favorite fillings for a wonderful Chipotle burrito
