Ingredients

Zucchini Bread

3 large eggs
1 cup cooking oil
2 cups sugar
2 cups zucchini, raw, grated, and peeled
3 tsp vanilla
3 cup flour
1 tsp baking soda
1 tsp salt
3 tsp cinnamon
1/4 tsp baking powder
1/2 cup nuts, chopped

Zucchini Bread Directions

  1. Combine eggs, oil, sugar, zucchini, and vanilla; mix well.
  2. Sift flour, soda, salt, cinnamon, and baking powder together.
  3. Add zucchini to mixture, blend well.
  4. Stir in chopped muts.
  5. Grease and flour bread pans.
  6. Bake at 350° for 1 hour.
  7. When cool, icing may be added if desitred.
