Ingredients
Chili
1 lbs ground beef |
1 lbs mild sausage |
1 medium onion, chopped |
2 clove garlic, minced |
2 Tbs butter |
2 cups beef broth |
2 14.5 ounce cans fire roasted tomatoes |
1 15 ounce can tomato paste |
2 27 ounce cans Bush's chili beans |
2 15 ounce cans Black Beans, rinsed |
2 15 ounce cans Kidney beans rinsed |
4 Tbs sugar |
2 tsp chili powder |
1 tsp salt |
1 tsp fresh oregano, chopped and bruised |
1/2 tsp cumin |
1/2 tsp crushed red pepper flakes |
1/4 tsp cayenne pepper |
1 12 ounce package frozen corn |
Optional Toppings
1/2 cup chopped green onions |
1 cup shredded cheddar cheese |
1 carton sour cream |
1 9.25 ounce bag Fritos |
Gramma's Cowboy Chili Directions
- Cook garlic and onion in the butter until translucent..
- Add hamburger, sausage and cook until done. Drain off fats careful not to take garlic or onions with it.
- Put the hamburger in a crock pot, add the broth, stewed tomatoes, tomato paste, beans, and spices.
- In a cast iron fry pan, spray a little canola oil in the bottom of the pan and turn on the stove and wait until the pan is pretty hot. In the meantime, run the corn under hot water in a strainer until defrosted.
- Pour out on cookie sheet and dry with paper towels. Pour into the fry pan and cook the corn until the edges are blackened.
- Add to the ingredients in the crock pot and cook for several hours.
- Top with chopped green onions, sour cream, Fritos and cheese if desired
Notes
I also sometimes use fresh beans that I soak in baking soda and warm water over night then cook before using in this recipe.
