Ingredients

Bread

5 cup warm water
1/2 cup honey
2 eggs
2 Tbls yeast
1/3 cup oil
1/3 cup potato flakes
6 cup whole-wheat flour
1 Tbs salt
4 cup unbleached flour ( use 5 cups if needed)

Delicious 2-Hour Whole-Wheat Bread Directions

  1. Dissolve yeast as package suggests.
  2. Make a sponge using all ingredients down to and including salt.
  3. Use bread mixer or hand-held beater.
  4. Let rest about 10 minutes.
  5. Add remaining flour gradually as needed, to make a soft dough.
  6. Knead on floured board; cover with plastic wrap and let rise until double.
  7. Punch down, shape into 4 loaves.
  8. Place in greased bread pans.
  9. Cover and let rise again, until double.
  10. Bake at 350° for 30-40 minutes
  11. Put hot bread on a towel to cool for a softer crust.
  12. Makes 4 loaves.
