Ingredients

Southwest Fajita Garden Omelette

1 cup onion, finely chopped
1 jalepeno pepper, minced
1 Tbs canola oil
6 large eggs, slightly beaten
6 strips bacon, cooked and crumbled
1 small tomato, chopped
1 medium avocado cut into 1 inch slices
salt and pepper to taste
salsa (optional)

Southwest Fajita Garden Omlette Directions

  1. Saute' the ontion an jalepenos in butter until tender.
  2. Remove and drain excess butter and set aside
  3. Pour eggs in skillet, cover nad cook on low for 3 to 4 minutes.
  4. Sprinkkle the onion mixture, bacon, tomato, avacado and 1/2 cup cheese on half of the eggs.
  5. Season with salt and pepper
  6. Fold the ommlet over the filling and cook on low for 3 to 4 minutes more or until the eggs are not longer runny.
  7. Sprinkle witch cheese and sever with salsa

Notes

When chopping the jalepeno pepper, use gloves and throw away the seeds, Rinse the peppers before using.
