Southwest Fajita Garden Omelette
1 cup onion, finely chopped |
1 jalepeno pepper, minced |
1 Tbs canola oil |
6 large eggs, slightly beaten |
6 strips bacon, cooked and crumbled |
1 small tomato, chopped |
1 medium avocado cut into 1 inch slices |
salt and pepper to taste |
salsa (optional) |
Southwest Fajita Garden Omlette Directions
- Saute' the ontion an jalepenos in butter until tender.
- Remove and drain excess butter and set aside
- Pour eggs in skillet, cover nad cook on low for 3 to 4 minutes.
- Sprinkkle the onion mixture, bacon, tomato, avacado and 1/2 cup cheese on half of the eggs.
- Season with salt and pepper
- Fold the ommlet over the filling and cook on low for 3 to 4 minutes more or until the eggs are not longer runny.
- Sprinkle witch cheese and sever with salsa
Notes
When chopping the jalepeno pepper, use gloves and throw away the seeds, Rinse the peppers before using.
