Ingredients

Stuffed Bell Peppers

4 large green peppers (red or yellow is ok too!)
1/2 lb hamburger
1/2 cup old- fashioned oatmeal
1 large egg
1 tsp garlic powder
1/3 cup onion, finely minced
2 med stalks green onion, finely chopped
1 1/2 tsp seasoned salt
fresh ground pepper
1/2 cup V-8 Juice
1 6 ounce can tomato paste

Stuffed Bell Peppers Directions

  1. Preheat oven to 350°
  2. Cut the top off of your bell peppers and clean out the seeds and the membrane and discard the top; set aside.
  3. In a large bowl, combine hamburger, oatmeal, garlic powder, minced onions, seasoned salt, and egg.
  4. Mix until ingredients are combines, but don't over mix.
  5. Stuff into peppers and place in 8x8" baking dish upright
  6. Mix the V-8 juice with the tomato paste and pour over tops of peppers and hamburger
  7. Top with finely chopped green onion and fresh ground pepper
  8. Put in overn for 25 minutes or until centers are well done.
  9. Take out of oven and let stand for 10 minutes.
  10. Serve

Notes

you can also slice the bell peppers in half and stuff them that way too!
