Ingredients

Sauce

2 Tbs butter
1 large shallot, finely minced
2 large cloves garlic, finely minced
3 Tbs Worcestershire sauce
1 Tbs orange juice
1 tsp Dijon mustard
1 cup Sensous slathering sauce
1 tsp salt

Finish

2 Tbs Salt
2 Tbs black pepper, freshly cracked
4 8 ounce beef tenderloin steaks
2 Tbs olive oil
2 Tbs crumbly bleu cheese
2 Tbs sliced scallions

Black N Blue Tenderloin Directions

  1. In a saucepan over mediumheat, melt the butter.
  2. Add the shallots and garlic, cooking until soft.
  3. Add the remaining ingredients,
  4. Keep warm on the back burner, stirring occasionally.
  5. In a large cast iron skillet (if you have one,) bring up to smoking on a high heat.
  6. Press the salt and pepper into the steaks, making sure to coat each side.
  7. Add olive oil to your pan, swirling arount to coat the surface.
  8. Add the steaks, blackening them for about 4 minutes on each side until medium rare, or to your preferred doneness.
  9. Remove from skillet and keep warm on a serving platter.
  10. Move the saucepan to the front burner.
  11. Quickly add the blue cheese.
  12. Stir quickly and pour over steaks before the cheese completely melts.
  13. Garnish with scallions.
