Ingredients

Ingredients:

1/2 cup bread crumbs
1/4 cup milk
1 pound ground beef
1 large egg
1/2 cup parsley, chopped
1/4 cup chopped onion
1/8 teaspoon garlic powder
1/4 teaspoon oregano, crumbled
1 teaspoon salt
1/4 teaspoon pepper
2 Tablespoon butter or margarine
2 Tablespoons red wine vinegar
2 cups hot, white rice

Parsley Meatballs Directions

  1. Salt breadcrumbs in milk until soft. Combine meat, eggs, parsley, onion, garlic powder, oregano, salt, pepper, and soaked bread crumbs in large mixing bowl. 
  2. Blend thoroughly. 
  3. Form into balls about one-inch in diameter.
  4. Heat butter or margarine in large skillet. Brown meatballs on all sides.
  5. Remove meat balls to heated serving dish.
  6. Pour vinegar into hot skillet; blend until meat droppings are dissolved. Pour over meatballs.
  7. Serve with rice. 
  8. Sprinkle rice with chopped parsley, if desired.
  9. Makes four servings
