Ingredients:
1/4 cup butter or margarine |
3/4 cup packed brown sugar |
1/2 cup coconut, shredded |
1 can slice peaches, (16oz) |
3 1/3 cup basic cake mix (recipe below) |
1/2 teaspoon ground alspice |
3/4 cup milk |
2 large eggs |
1 teaspoon vanilla |
Basic Cake Mix:
3/4 cup butter, unsalted |
1 1/2 cup sugar |
2 teaspoon baking powder |
2 teaspoons vanilla |
4 large eggs |
2 1/4 cups all-purpose flour |
1 cup milk |
Upside-down Spice Cake Directions
- In a 13 x 9 x 2 inch baking pan melt the butter or margarine. Stir in the brown sugar and coconut. Top with the peach slices. In mixer bowl combine the Basic Cake Mix and allspice. Add the milk. Beat at low speed of electric mixer until moistened. Beat 1 minute at medium speed. Add eggs and vanilla. Beat 2 minutes at medium speed. Spread batter evenly over peach mixture in pan. Bake in a 350 degree oven for 35 to 40 minutes or until wooden pick inserted near center comes out clean. Cool cake 5 minutes on wire rack; invert onto cake plate. Serve warm.
- Directions for the basic cake mix:
- Beat butter, sugar, baking powder, and vanilla in a large bowl with mixer on high 3 minutes or until fluffy. Add eggs, 1 at a time, beating well after each. On low speed, beat in flour in 3 additions alternately with milk in 2 additions, just until blended, scraping sides of bowl as needed. Bake at 350 degrees for 35 minutes or until toothpick inserted in center comes out clean. Cool in pans on a wire rack for 10 minutes.
