Ingredients
Chicken and Marinade
1 whole chicken, cut up |
1/4 cup soy sauce |
3 cloves garlic, minced |
1/4 cup olive oil |
1 tsp fresh ginger, minced |
2 Tbs fresh lemon juice |
1 tsp pepper fresh ground |
2 Tbs sugar |
1/4 tsp salt |
2 Tbs apple juice |
2 cup fresh cranberry sauce |
1 med orange, zest & juice |
Cranberry Sauce
1 cup water |
1 cup sugar |
2 cup cranberries |
Kelley's Chicken in Cranberry Marinade Directions
- Boil water and sugar 5 minutes.
- Add cranberries.
- reduce heat, cover and simmer until berries pop, about 10 minutes.
- For chicken, combine all ingredients in a glass dish and marinate chicken at room temperature for 2 hours or in the refrigerator for longer.
- To bake, place chicken in a singel layer in baking pan.
- Pour marinade over chicken and bake at 350° for 50 minues to an hour, basting occasionally.
- Transfer to platter.
- Simmer marinade in saucepan to reduce slightly.
- Serve warm with chicken.
