Ingredients

Chicken Al La King

5 chicken breast
1 bay leaf
1/2 tsp thyme
1 medium onion, quartered
1/2 cup butter or margarine
1/2 lb fresh mushrooms, sliced
1/2 cup onion, chopped
2/3 cup green pepper, chopped
3/4 cup flour
1 can evaporated mil
1/2 cup regular milk
3 cup reserved chicken broth
1 14 ounce can chicken broth
2 1/2 Tbs chicken soup base
2 Tbs lemon juice
1 4 ounce jar chopped pimento

Chicken Al La King Directions

  1. Place chicken in a large pot.
  2. Cover with the lightly salted water.
  3. Add the onion and the seasonings.
  4. Boil until chicken is cooked through.
  5. Remove the chicken; cool and cut into bite-size pieces.
  6. Save the broth for later, straining out the onion and bay leaf.
  7. In a large saucepan, melt the butter, and sauté the mushrooms and the chopped onion, and green pepper.
  8. Add the flour, stirring with a wire whis.
  9. Add the evaporated mil, and the regular milk.
  10. Then add the reserve chicken broth, chicken broth, water and the dry soup base.
  11. Stir until thickened.
  12. Add the lemon juice, chopped pimento and the cut up chicken.
  13. Serve on rice of baked pastry shell.
