Ingredients
Chicken Al La King
5 chicken breast |
1 bay leaf |
1/2 tsp thyme |
1 medium onion, quartered |
1/2 cup butter or margarine |
1/2 lb fresh mushrooms, sliced |
1/2 cup onion, chopped |
2/3 cup green pepper, chopped |
3/4 cup flour |
1 can evaporated mil |
1/2 cup regular milk |
3 cup reserved chicken broth |
1 14 ounce can chicken broth |
2 1/2 Tbs chicken soup base |
2 Tbs lemon juice |
1 4 ounce jar chopped pimento |
Chicken Al La King Directions
- Place chicken in a large pot.
- Cover with the lightly salted water.
- Add the onion and the seasonings.
- Boil until chicken is cooked through.
- Remove the chicken; cool and cut into bite-size pieces.
- Save the broth for later, straining out the onion and bay leaf.
- In a large saucepan, melt the butter, and sauté the mushrooms and the chopped onion, and green pepper.
- Add the flour, stirring with a wire whis.
- Add the evaporated mil, and the regular milk.
- Then add the reserve chicken broth, chicken broth, water and the dry soup base.
- Stir until thickened.
- Add the lemon juice, chopped pimento and the cut up chicken.
- Serve on rice of baked pastry shell.
