Chicken Mozzerella
6 split, skinned, and boneless chicken breasts |
1 large egg |
3 Tbs milk |
1/4 cup onion, chopped |
1 tsp Italian herb seasoning |
1/4 tsp pepper |
1/4 tsp coriander |
3 Tbs butter or salad oil |
2 cloves garlic, minced |
1/2 cup cornflakes |
1/2 cup flour |
1/2 cup Parmesan cheese |
6 slices mozzarella cheese |
Chicken Mozzerella Directions
- Pound between 2 pieces of waxed paper 3/8 inch thick.
- Whip egg, milk, onion, and garlic in blender until smooth.
- Place in a dipping dish.
- Mix crumbs, flour, Parmesan cheese, herb seasoning. pepper and coriander.
- Dip chicken in dipping dish, then in crumbs.
- Fry in pan on medium heat.
- Sauté 1/2 chickens in butter and oil 1 1/2 minutes on each side.
- Place on baking sheet, each chicken with mozzarella cheese.
- Set 6 inches from broiler.
- Cook until cheese is melted. (2-3 minutes)
