Ingredients

Chicken Mozzerella

6 split, skinned, and boneless chicken breasts
1 large egg
3 Tbs milk
1/4 cup onion, chopped
1 tsp Italian herb seasoning
1/4 tsp pepper
1/4 tsp coriander
3 Tbs butter or salad oil
2 cloves garlic, minced
1/2 cup cornflakes
1/2 cup flour
1/2 cup Parmesan cheese
6 slices mozzarella cheese

Chicken Mozzerella Directions

  1. Pound between 2 pieces of waxed paper 3/8 inch thick.
  2. Whip egg, milk, onion, and garlic in blender until smooth.
  3. Place in a dipping dish.
  4. Mix crumbs, flour, Parmesan cheese, herb seasoning. pepper and coriander.
  5. Dip chicken in dipping dish, then in crumbs.
  6. Fry in pan on medium heat.
  7. Sauté 1/2 chickens in butter and oil 1 1/2 minutes on each side.
  8. Place on baking sheet, each chicken with mozzarella cheese.
  9. Set 6 inches from broiler.
  10. Cook until cheese is melted. (2-3 minutes)
