Ingredients

Chicken & Broccoli Casserole

3 whole chicken breasts
1/2 cup flour
1 Tbs dried sage
1 tsp paprika
3 Tbs unsalted butter
2 cups chopped broccoli
6 thin slices lean boiled ham
1 cup heavy whipping cream
1/2 cup freshly grated parmesan or romano cheese
salt and freshly ground pepper to taste

Chicken & Broccoli Casserole Directions

  1. Preheat oven to 350°
  2. Halve, skin, and bone the chicken breasts.
  3. Mix the flour, sage, and paprika together in a sturdy paper bag.
  4. Drop each chicken piece into the bag and shake to coat on all sides.
  5. Shake off any excess.
  6. Melt the butter in a saute pan over medium heat.
  7. Add the chicken pieces and daute, turning as the become golden, 3-4 minutes on each side.
  8. Remove the chicken and set aside.
  9. Leave the pan on the stove.
  10. Arrange the broccoli in a layer in the bottom of a baking dish,
  11. Cover with the browned chicken and top each chicken piece with a slice of ham.
  12. Pour off the excess oil from the saute pan and add the cream.
  13. Bring to a boil over high heat.
  14. De glaze the pan by stirring to dislodge any browned bits.
  15. Stir in all but 2 tablespoons of the cheese and season to taste with salt and pepper.
  16. Remove from the heat; top each piece of ham with a spoonful of the cream sauce and pour the remaining sauce around the chicken.
  17. Sprinkle the reserved 2 tablespoons of cheese over the top.
  18. Place in the oven and bake until the chicken is tender and the sauce is bubbling, 30-40 minutes.
  19. Serve directly from the baking dish.
