Ingredients
Chicken & Broccoli Casserole
3 whole chicken breasts |
1/2 cup flour |
1 Tbs dried sage |
1 tsp paprika |
3 Tbs unsalted butter |
2 cups chopped broccoli |
6 thin slices lean boiled ham |
1 cup heavy whipping cream |
1/2 cup freshly grated parmesan or romano cheese |
salt and freshly ground pepper to taste |
Chicken & Broccoli Casserole Directions
- Preheat oven to 350°
- Halve, skin, and bone the chicken breasts.
- Mix the flour, sage, and paprika together in a sturdy paper bag.
- Drop each chicken piece into the bag and shake to coat on all sides.
- Shake off any excess.
- Melt the butter in a saute pan over medium heat.
- Add the chicken pieces and daute, turning as the become golden, 3-4 minutes on each side.
- Remove the chicken and set aside.
- Leave the pan on the stove.
- Arrange the broccoli in a layer in the bottom of a baking dish,
- Cover with the browned chicken and top each chicken piece with a slice of ham.
- Pour off the excess oil from the saute pan and add the cream.
- Bring to a boil over high heat.
- De glaze the pan by stirring to dislodge any browned bits.
- Stir in all but 2 tablespoons of the cheese and season to taste with salt and pepper.
- Remove from the heat; top each piece of ham with a spoonful of the cream sauce and pour the remaining sauce around the chicken.
- Sprinkle the reserved 2 tablespoons of cheese over the top.
- Place in the oven and bake until the chicken is tender and the sauce is bubbling, 30-40 minutes.
- Serve directly from the baking dish.
