Ingredients

Chicken Roaster

1 whole chicken (5-7 pounds)
1 Tbs salt
1 tsp cayenne pepper
1 tsp onnion powder
3/4 tsp garlic powder
1/4 tsp Black Pepper, ground
2 tsp smoked paprika
4 tsp thyme

Chicken Roaster Directions

  1. Combine salt, paprika, cayenne pepper, onion powder, thyme, garlic powder, white and black pepper,.
  2. Mix well.
  3. Rub the chicken with combined spices.
  4. Place the chicken in a resealable bag.
  5. Marinate in the refrigerator for 12 hours.
  6. Remove the chicken from the bag.

    Arrange in a baking pan with a wire rack.
  7. Preheat oven to 245 degrees.
  8. Roast the chicken for 4 hours 30 minutes, Basting the chicken after an hour, repeating every 40 minutes.
