Dirty Rice
1/3 cup olive oil |
2 cups onion, finely chopped |
1 cup green pepper, finely chopped |
1/8 tsp salt |
1/8 tsp pepper, freshly ground |
1 large jalapeno pepper, seeded, and minced |
1/2 lb boneless chicken thigh, skinless and cut into cubes |
1 lb sweet Italian sausage |
1/4 lb ham, cooked and cubed |
1/4 lb pork, cubed |
1/2 lb chicken liver, pureed in food processor |
3 cups chicken broth |
1/4 tsp cayenne pepper |
1 tsp ground cumin |
1 tsp dried oregano |
1 bay leaf |
1 1/2 cups long grain rice, par boiled |
Dirty Rice Directions
- In a Dutch oven, add oil and het until hot over medium heat.
- Add the onions, green peppers,a nd jalepnoes.
- Add salt and pepper to your taste.
- Cook until edges are brown
- Add garlic and cook for a minute longer.
- Add the chicken and cook, stirring until the chicken is coated with the vegetables.
- Add the sausage crubling while you cook it until it looses the pink color.
- Add the remaining meat and the liver puree
- Pou int eh broth and add cayenne, cumin, oregano and bay leaf.
- Stir in rice and bring to a boil.
- Cover and lower the heat to low, simmering for 20 minutes without stirring..
- Remoce the pot from the stove and remove the bay leaf.
- Stir to fluff the rice and serve.
