Ingredients

Dirty Rice

1/3 cup olive oil
2 cups onion, finely chopped
1 cup green pepper, finely chopped
1/8 tsp salt
1/8 tsp pepper, freshly ground
1 large jalapeno pepper, seeded, and minced
1/2 lb boneless chicken thigh, skinless and cut into cubes
1 lb sweet Italian sausage
1/4 lb ham, cooked and cubed
1/4 lb pork, cubed
1/2 lb chicken liver, pureed in food processor
3 cups chicken broth
1/4 tsp cayenne pepper
1 tsp ground cumin
1 tsp dried oregano
1 bay leaf
1 1/2 cups long grain rice, par boiled

Dirty Rice Directions

  1. In a Dutch oven, add oil and het until hot over medium heat.
  2. Add the onions, green peppers,a nd jalepnoes.
  3. Add salt and pepper to your taste.
  4. Cook until edges are brown
  5. Add garlic and cook for a minute longer.
  6. Add the chicken and cook, stirring until the chicken is coated with the vegetables.
  7. Add the sausage crubling while you cook it until it looses the pink color.
  8. Add the remaining meat and the liver puree
  9. Pou int eh broth and add cayenne, cumin, oregano and bay leaf.
  10. Stir in rice and bring to a boil.
  11. Cover and lower the heat to low, simmering for 20 minutes without stirring..
  12. Remoce the pot from the stove and remove the bay leaf.
  13. Stir to fluff the rice and serve.
