Ingredients
Marinade
2 cups plain yougurt |
1 Tbs fresh grated ginger |
1 Tbs fresh minced garlic |
1/3 cup fresh lime juice |
2 Tbs paprika |
2 Tbs salt |
1 1/2 tsp cinnamon |
1 tsp cumin |
1 tsp coriander |
1 tsp black pepper, freshly ground |
1 tsp allspice |
1 tsp mustard seed |
1 tsp honey |
Main Dish
4 8 - 10 ounce boneless chicken breast |
1/4 cup olive oil |
1 med onion, sliced |
1 med red bell pepper, sliced |
1/2 cup BBQ sauce |
Exotic Chicken Directions
- Cut 3-4 slits on the top of each chicken breast.
- In a bowl, mix the marinade together and pour into a large ziplock freezer bag, adding the chicken breasts.
- Zip the bag carfully and place in the refrigerator overnight to marinade.
- When ready, heat the grill to medium and cook the chicken breasts until done (About 10 - 12 minutes)
- In a seperate pan, saute the onion and pepper until cooked down.
- Add the BBQ sauce.
- Cook until hot and top eash chicken breast with the onion and pepper mixture.
