Ingredients

Dirty Rice

1/2 cup oil
1/4 cup flour
1 cup minced onion
1 1/2 pounds chicken liver, finely chopped
1/3 cup celery, minced
1/2 cup parsley, minced
1/2 cup green pepper, diced
1 clove garlic, minced
2 teaspoons salt
1 teaspoon black pepper
4 1/2 cup chicken stock
2 cups long grain rice

Dirty Rice Directions

  1. Preheat oven to 350°
  2. In a large pan, bring the stock to a boil and add the rice.
  3. Reduce the heat and simmer until rice is tender, about 20 minutes.
  4. In another large pan, heat the oil and add the flour.
  5. Saute onions, chicken livers, celery, parsley and garlic for several minutes.
  6. Add the seasonings and saute again for about 2 to 3 minutes.
  7. Add to the rice, stirring well to combine all ingredients
  8. Pour the cooked rice into an oven safe dish and put in the overn, cooking for 20 minutes.
  9. Serve!
