Ingredients

Chili

1 lbs ground beef
1 lbs mild sausage
1 medium onion, chopped
2 clove garlic, minced
2 Tbs butter
2 cups beef broth
2 14.5 ounce cans fire roasted tomatoes
1 15 ounce can tomato paste
2 27 ounce cans Bush's chili beans
2 15 ounce cans Black Beans, rinsed
2 15 ounce cans Kidney beans rinsed
4 Tbs sugar
2 tsp chili powder
1 tsp salt
1 tsp fresh oregano, chopped and bruised
1/2 tsp cumin
1/2 tsp crushed red pepper flakes
1/4 tsp cayenne pepper
1 12 ounce package frozen corn

Optional Toppings

1/2 cup chopped green onions
1 cup shredded cheddar cheese
1 carton sour cream
1 9.25 ounce bag Fritos

Gramma's Cowboy Chili Directions

  1. Cook garlic and  onion in the butter until translucent..
  2. Add hamburger, sausage and cook until done. Drain off fats careful not to take garlic or onions with it.
  3. Put the hamburger in a crock pot, add the broth, stewed tomatoes, tomato paste, beans, and spices.
  4. In a cast iron fry pan, spray a little canola oil in the bottom of the pan and turn on the stove and wait until the pan is pretty hot. In the meantime, run the corn under hot water in a strainer until defrosted.
  5. Pour out on cookie sheet and dry with paper towels. Pour into the fry pan and cook the corn until the edges are blackened.
  6. Add to the ingredients in the crock pot and cook for several hours.
  7.  
  8. Top with chopped green onions, sour cream, Fritos and cheese if desired

Notes

I also sometimes use fresh beans that I soak in baking soda and warm water over night then cook before using in this recipe.

Ingredients

Nikuman Dough

2 1/2 Cups All Purpose Flour
4 Teaspoons Baking Powder
1/4 Cup Granulated Sugar
2/3 Cup Warm Milk (Add more as needed

Nikuman Filling

16 Ounce Mild Sausage
3 Stalks Green onions
1 1/2 Ounces Bamboo shoots finely chopped
1 Can Water Chestnuts finely chopped
2 teaspoons Ginger finely grated
1/4 Cup Plum Sauce
1/4 Cup Oyster Sauce
2 Teaspoons Soy Sauce
2 Teaspoons Granulated Sugar
1 Teaspoon Sesame Oil

Nikuman Buns Directions

  1. 1. Make the dough: Sift the flour and baking powder together in a large bowl. Whisk the sugar into the flour. Pour the warm milk into the flour gradually, while stirring the flour with a wooden spoon, or your hand. Knead the dough until it becomes soft and smooth, about 15 minutes. Cover the dough with a piece of plastic wrap and let the dough rest at room temperature for 30 minutes. Divide the dough into 8 balls. Cover with plastic wrap and set aside.
  2. 2. Make the filling: Put the ground pork, green onion, bamboo shoots, water chestnuts, and ginger into a large bowl. Add the chili garlic sauce, soy sauce, sugar, and sesame oil. Mix the ingredients together until well incorporated and the meat becomes sticky.
  3. 3. Assemble the buns: Take a ball of dough and flatten it between your hands. Then, using a rolling pin, roll the dough out into a circle that is about 5 to 5 1/2 inches in diameter. Using your fingers, pinch the edges of the dough to make them thinner. Divide the meat mixture into 8 balls. Place one ball in the center of the dough and wrap it by bringing the dough up around the meat to the top, forming little pleats with the excess tough, then slightly twisting the dough to close it, then pinching it firmly to join it. Put the bun on a small square of parchment or wax paper. Repeat the process with the rest of the dough and meat.
  4. 4. Cook the buns: Put the water in the steamer base, along with 1 tablespoon of rice vinegar (optional). The vinegar will create a whiter looking buns. Preheat the steamer on high heat until it starts steaming. Place the buns on their squares of parchment/wax paper in the steamer and cover. Steam for 15 minutes on high heat. Remove from the heat and serve.
