Ingredients

Cake

2 cups flour
2 tsp baking powder
1 1/2 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
2 cups sugar
1/2 cup cooking oil
4 large eggs
2 cups carrots, finely grated
1 20 ounce can crushed pineapple, drained
1/2 cup chopped walnuts/pecans

Carrot Cake Directions

  1. Sift together flour, baking powder, baking soda, salt, and cinnamon.
  2. Mix sugar, oil and eggs, then add to flour mixture
  3. Add carrots, pineapple and nuts.
  4. Bake 350° 35 - 40 minutes. Frost with cream cheese frosting found here.
