Ingredients:
1 large Eggplant, peeled, pared and cut into 1/2 inch slices |
1 large Onion, cut in rings |
1 large Green pepper, cut in rings |
1 large Tomato, cut in slices |
1/2 cup Butter |
1/2 cup Breadcrumbs |
1 dash salt |
1 dash pepper |
1/4 cup Parmesan cheese |
Baked Eggplant Directions
- Peel and parent eggplant and cut into 1/2 inch slices. Dip in seasoned flour and brown lightly in oil and butter. Arrange in layers was then the onion rings, green pepper rings and tomato slices. Dort each layer generously with butter, or sprinkle with oil and season with salt and pepper. Top the whole thing was buttered crumbs and grated parmesan cheese, mixed. Bake in a 350° oven for 1/2 hour or until the vegetable is tender. Serves four.
