Ingredients

Ingredients:

4 large green tomatoes, sliced
1 large onions (or 2)
8 slices bacon (Or 1 cup cooked ham)
3 Tablespoons sweet butter

Fried Green Tomatoes Directions

  1. slice tomatoes to desired thickness ( about 1/4 inch )
  2. slice onion thin
  3. slice bacon in two or three pieces ( if you use ham slice in strips 1/4 inches thick or dice it )
  4. fry bacon until desired doneness but not too crispy where it crumbles
  5. reserve 3 or 4 tablespoons bacon drippings
  6. remove bacon from pan
  7. heat butter and add bacon drippings
  8. fry tomatoes on both sides and sliced onions until tender
  9. add bacon for last minute of cooking * if you use ham cook with tomatoes until thoroughly heated.
  10. salt and pepper to taste
  11. can add 1 tablespoon garlic oil while cooking
  12. serve hot
  13. here are some variations you may like
  14. Variation #1 -dip tomatoes in egg and then grated Parmesan cheese before frying
  15. Variation #2-when finished frying place a piece of Gruyere cheese and crumble bacon on top of each slice and broil until cheese begins to bubble
  16. Variation#3-top with warm goat cheese and serve on lettuce garnish with ½ Avocado for delicious lunch salad
