slice tomatoes to desired thickness ( about 1/4 inch )
slice onion thin
slice bacon in two or three pieces ( if you use ham slice in strips 1/4 inches thick or dice it )
fry bacon until desired doneness but not too crispy where it crumbles
reserve 3 or 4 tablespoons bacon drippings
remove bacon from pan
heat butter and add bacon drippings
fry tomatoes on both sides and sliced onions until tender
add bacon for last minute of cooking * if you use ham cook with tomatoes until thoroughly heated.
salt and pepper to taste
can add 1 tablespoon garlic oil while cooking
serve hot
here are some variations you may like
Variation #1 -dip tomatoes in egg and then grated Parmesan cheese before frying
Variation #2-when finished frying place a piece of Gruyere cheese and crumble bacon on top of each slice and broil until cheese begins to bubble
Variation#3-top with warm goat cheese and serve on lettuce garnish with ½ Avocado for delicious lunch salad
